Vietnam is long and varied, but the experience that stayed with me most was Halong Bay. An overnight cruise among those limestone karst islands — kayaking through the coves, a quiet sunrise over the water — is worth every taka, and I recommend it to everyone. Don't day-trip it if you can avoid it; the overnight boat is the whole point. And wherever you go in Vietnam, eat the street food — the pho and banh mi are some of the best, cheapest meals you'll find anywhere.
